I Made Guacamole!

This weekend in Vancouver I attended a rooftop pool party with a group of sassy ladies from a meetup.com group. One of the organizers of the group, Vy, had offered up the rooftop pool area of her condo building in the city's Yaletown neighborhood as a place for us all to get together and brainstorm some fun activities for the group.

For many of the 20 or so women there, it was our first time meeting up with that particular group, so there was a good amount of "getting to know each other" happening in addition to the brainstorming and pool partying.

We were all encouraged to bring snacks and drinks to the rooftop, and I thought that fresh guacamole and tortilla chips seemed like a pretty decent pool-side summer snack. While I'd never made guacamole before, I was fairly sure that since it involved no cooking or baking... I'd probably be able to avoid screwing it up.

I found a recipe on allrecipes.com for guacamole that looked easy enough, with no crazy surprise ingredients listed. I just needed to adjust the recipe to make more of it, since there were going to be quite a few ladies at the pool!

Here's what you need:
  • 5 avocados, all soft to the touch
  • 1 1/2 limes
  • 3-4 Roma tomatoes, diced
  • 2 cloves of garlic, minced
  • 1 medium onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon salt

 1. Peel and quarter your avocados and put them into a medium-largish bowl. Use a fork to mash them up to your desired creaminess or chunkiness. I left mine a bit chunky, which was good because as I added and combined the other ingredients, the avo became increasingly more mashed along the way. So if you like your guacamole chunky, I'd recommend leaving it extra chunky before continuing to the next step.

2. Squeeze the juice from the limes into the mashed avocados, then add salt to the mixture and combine it well.

3. Add your onions, garlic, tomatoes and cilantro...


Mix it all together well and BAM:

I actually really enjoyed myself while making this, which is pretty crazy if you know me and know how much I generally hate preparing food. It was fun to chop, peel and mash all those avocados. The best part of all is that the girls at the pool really enjoyed it!
